Lemon, Marmalade and Courgette Cake Recipe

  • 225 g self-raising wholemeal flour
  • 1 lemon, grated rind and juice
  • 225 g courgettes, grated
  • 125 g butter, softened ((or margarine))
  • 125 g soft brown sugar
  • 2 medium eggs, beaten
  • 125 g lemon marmalade
  • 175 g mixed dried fruit
  • Icing sugar and shredded lemon rind for decoration
  1. Grease and line 20cm (8inch) round cake tin

  2. Place dried fruit, lemon rind and lemon juice in a bowl & soak for 30 mins

  3. Add courgettes and marmalade and stir until evenly mixed.

  4. Cream butter (or margarine) and sugar together in a separate bowl until light and fluffy

  5. Beat in eggs

  6. Stir in courgette mixture and flour, mix evenly

  7. Bake for about 55 mins at Gas Mark 3, 325ºF/170ºC

  8. Decorate with icing sugar and lemon rind or lemon icing.
